- ½ cup mayonnaise
- 2 tbsp finely chopped dill pickles
- 1 tbsp yellow mustard
- 1 tsp white vinegar
- 1 tsp paprika
- ¼ tsp garlic powder
- ¼ tsp onion powder
- 1 lb lean ground beef
- ½ cup finely chopped onion
- Salt and pepper (to taste)
- 4 large flour tortillas
- 1 cup shredded lettuce
- 1 cup shredded cheddar cheese
- Dill pickle slices (optional)
- 1 tbsp olive oil
Instructions
- Prepare the Special Sauce: In a bowl, whisk mayonnaise, finely chopped dill pickles, yellow mustard, white vinegar, paprika, garlic powder and onion powder until smooth; season to taste. Chill briefly for flavors to meld.
- Cook the Beef: Heat olive oil in a skillet over medium-high heat, add finely chopped onion and cook until translucent, add lean ground beef, season with salt and pepper and cook until browned and crumbly; drain any excess fat.
- Assemble the Wraps: Warm tortillas, spread a generous spoonful of the special sauce, add cooked beef, shredded lettuce, shredded cheddar cheese and dill pickle slices if using; fold edges neatly.
- Wrap and Serve: Heat a dry skillet to press each wrap briefly if desired, then slice on the diagonal and serve immediately with extra sauce on the side.
Notes
For a delicious glossy sauce, emulsify the mayonnaise and mustard vigorously before adding the pickles. Adjust the sauce quantity to keep the wrap from getting soggy.
